Craving something sweet and homemade? These banana muffins are perfect for breakfast, a snack, or even dessert. They’re easy to make and super delicious. Let’s get baking!
Ingredients
- 2 to 3 ripe bananas** (the riper, the better!)
- 1/3 cup melted butter (unsalted is best)
- 1 teaspoon baking soda
- Pinch of salt
- 3/4 cup sugar (adjust to taste; use less if bananas are super sweet)
- 1 large egg (beaten)
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
Optional Add-ins
- 1/2 cup chopped nuts** (walnuts or pecans are great)
- 1/2 cup chocolate chips (for a sweeter treat)
- 1/2 teaspoon cinnamon (for a bit of spice)
Instructions
- Preheat your oven to 350°F (175°C).
- This is to ensure the oven is hot and ready to bake your muffins perfectly.
- Prepare your muffin tin.
- Line it with muffin liners or grease it lightly with butter or non-stick spray.
- Mash the bananas.
- In a large mixing bowl, use a fork to mash the bananas until smooth. Leave a few chunks if you like your muffins with bits of banana.
- Add melted butter to the bananas.
- Stir until combined. This helps in making the muffins moist and flavorful.
- Mix in baking soda and salt.
- This helps the muffins rise and adds a bit of flavor.
- Stir in the sugar, egg, and vanilla extract.
- Mix well until all ingredients are fully combined. The mixture should be smooth and creamy.
- Add the flour.
- Slowly add the flour and mix just until incorporated. Over-mixing can make the muffins tough, so mix gently.
- Fold in any optional add-ins.
- If using nuts, chocolate chips, or cinnamon, gently fold them into the batter now.
- Spoon the batter into the muffin tin.
- Fill each cup about 3/4 full. This gives the muffins room to rise without overflowing.
- Bake for 20-25 minutes.
- Check them at 20 minutes. A toothpick inserted into the center should come out clean or with a few crumbs, but not wet.
- Cool the muffins.
- Let them cool in the tin for about 5 minutes, then transfer to a wire rack to cool completely. Or enjoy them warm!
- Tips for Perfect Muffins:
- Use ripe bananas. The riper the bananas, the sweeter and more flavorful your muffins will be.
- Don’t over-mix the batter. It’s okay if there are a few lumps. Over-mixing can lead to dense muffins.
- Experiment with flavors. Add a sprinkle of cinnamon or a handful of blueberries for a twist.
- Enjoy your homemade banana muffins with a cup of coffee or a glass of milk. Happy baking!
